Before being master pasta makers and millers, we are farmers, and it is precisely this that makes the difference because we take care of the entire production cycle of cereals, from fields to table.
Come and discover with your own eyes how our products are made by taking part in our guided tours of the new production plant at Podere Lamone or at the fresh pasta laboratory at Castello di Spedaletto. You will taste our products in our very short chain lunches and you will learn all the secrets of ancient grains in the kitchen by participating in our cooking class!
The new production plant is located 2km from Monticchiello, is surrounded by our fields and overlooks the Val d’Orcia with a splendid view of Pienza.
After a brief introduction on Ancient Grains we will begin the journey from the first phase of processing: sifting, the cleaning process of the cereals that is carried out before grinding. The visit continues through the storage area up to the mill with millstones, where you will assist in the grinding and discover the differences between the various types of flour. This leads us to the last phase of the cycle, in the pasta factory where we produce our bronze-drawn pasta from ancient grains and slowly dried at low temperature.
To conclude the visit, all you have to do is taste! You can enjoy a very short supply chain lunch at our restaurant in the charming Spedaletto Castle, about 6 km from the pasta factory.
