This experience will take you on a fantastic journey from the grain of wheat to the table, through the kitchen.
The experience begins with a guided tour of the new production plant, 2km from Monticchiello, immersed in our fields of ancient grains with a splendid view of Pienza.
You will discover everything about ancient grains, starting from the sifting, the cleaning process of the cereals, continuing through the storage area up to the mill with millstones, where you will assist in the grinding and discover the differences between the various types of flour. The visit ends in the pasta factory where we produce our bronze-drawn pasta from ancient grains and slowly dried at low temperatures.
At this point we will move to the adjacent farmhouse where you will participate in the Pasta class, using the ingredients you have just seen being produced. You will learn how to use stone-ground ancient grain flours in the preparation of a dough for focaccia and two types of fresh pasta, including the traditional pici.
At the end of the pasta class you can sit comfortably at the table to taste the fruit of your work and enjoy a delicious four-course lunch:
