Our Agriturismo Spedaletto Castle offers many special experiences: our company produces mainly cereals that are milled in our mill with millstones to produce flour and pasta.
The visit starts from the field where we explain the process of planting and traditional cultivation, highlighting the differences between traditional techniques and current systems.
￼Then we move to the mill of Spedaletto Castle, where we observe closely the whole process that bring from cereal to pasta in our laboratory, distinguishing the different semi-finished products. We see the milling of cereals due to a mill with millstones and the obtaining of different flours. The miller explains how the sifter separates the flour type 1, type 2, middlings and bran. With the flours obtained we proceed to production of typical tuscan pasta with a small artisan pasta machine, the dough is extruded through bronze and prepared for drying.
